Lancaster Cupcake was founded on the belief that a cupcake has the simple power to impact someones day. Lancaster Cupcake began with Emily Barcklow Mitchell baking cupcakes for friends, family, and co-workers while pursuing a full time nursing career. Baking began to take form as the demand for her cupcakes increased.


As a lifelong baker, inspired by many chocolate-batter-covered spatulas in her mother’s kitchen, Emily opened Lancaster Cupcake in 2011 as PA’s first and only subscription based Cupcakery. In 2012, Emily and her husband Jeff were featured on the popular Food Network show Cupcakes Wars taking an incredible second place. Central PA’s first Cupcake Truck was built soon after their episode's debuted in November.


Since then, Lancaster Cupcake has expanded to include three locations, two cupcake trucks, and has emerged as Central PA’s premier destination for the most delicious cupcakes.




Being on the show was one of the most exciting and challenging experiences we have ever accomplished. The show aired at the very start of our baking career and has encouraged us everyday. Check out  the trailer for our Cupcake Wars episode below.
